Sedimentation / Sedimaks


Sedimaks device provides information about the protein quality of the grain and sunn damage. In sedimentation analysis, flour is first mixed with bromine phenol solution and then with lactic acid solution in the device for five minutes. The mixing process takes place at a speed of 40 rpm with the tubes at a 30 degree angle. The analysis result is determined as the amount of sedimentation in the tube after five minutes of listening. The design of the device was renewed by our engineers in 2017 and registered with the Turkish Patent Institute.

Zeleny Sedimentation Method


The purpose of this method is to obtain information about the amount and quality of organic matter in wheat flour by working with a small amount of samples in a short time. The flour sample to be tested (3.2 g) and the Bromine Phenol solution (50 ml) are mixed in the device for 5 minutes. Then, lactic acid solution (25 ml) is added and mixed for another 5 minutes. The sedimentation amount is read after the analysis tube rests in the oven at a constant temperature of 25 °C for 5 minutes. After mixing, the flour particles swell depending on the quality of the organic matter (gluten) and sink to the bottom after a certain period of time. The higher the gluten quality, the greater the swelling in those flour particles. The later it takes for overswollen particles to settle to the bottom and the higher the sedimentation value. The sedimentation value is expected to be over 40 for strong wheat.
