Gluten Index is a centrifugal device specially designed for the milling industry. In the device, which rotates at 6000 revolutions per minute, gluten is passed through a metal sieve and gluten quality is determined. Santrimaks has a capacity of two samples and saves personnel costs and time. The design of the device was renewed by our engineers in 2017 and registered with the Turkish Patent Institute.

Gluten index value is a value in percentage (%) that gives information about the quality of gluten. As the gluten index value increases, the gluten quality of the flour increases. Flour samples defined as weak have low gluten index values. As a result of centrifuging the wet gluten obtained in the gluten washing device at a constant speed (6000 rpm), a part of the sample passes through a special sieve. The ratio of the amount of gluten that does not pass through the sieve to the total amount of gluten gives information about the quality of gluten.
